Berry Fruit Tiramisu
(Kids friendly , Non Alcoholic tiramisu, No raw eggs used)
This is my first post. Lets have something sweet for this auspicious beginning :) I choose my favorite Italian dessert with a slight variation which became a big hit. I use custard in place of eggs and there is no use of alcohol, so you can serve it to kids & even vegetarians. Yet there is no compromise in taste. Its super delicious. Your guest without doubt will never stop praising you for treating them with this sweet delight !!
Ingredients:
For Homemade Whipped Cream
- Heavy Whipping Cream plus - 3/4 Cup
- 2 Tbsp Sugar whipped
- Berries - 1.5 cup (I used blueberries only. Alternative: mix of strawberries, blueberries, blackberries according to your preference)
- Brown Sugar - 4 tsp
- Juice from 1 Lemon
For Custard
- Sugar - 3 tbsp
- Custard powder - 2 tbsp
- Milk - 150 ml
Other Ingredients
- Cream cheese made to room temperature - 8 oz ( Alternative: mascarpone cheese. Will taste great)
- Sugar - 4 tbsp
- Lady Fingers biscuit - 1 package (Alternative: Sponge cake)
- Finely cut apple pieces - 1 - 1/2 cup (optional. It adds crunchiness and tastes good)
Instructions:
- For whipped cream, whip Heavy Whipping Cream and Sugar in a cooled bowl until fluffy. Refrigerate it.
- Prepare custard by dissolving custard powder in little milk. Heat the rest of the milk in low flame. Once milk is warmed add the custard mixture to milk and keep stirring. Cook till done. Let it cool.
- For berry sauce, in a saucepan heat berries, brown sugar and lemon juice on medium low flame. Heat till the brown sugar has melted. Let the sauce cool well and then strain the juice.
- In a large mixing bowl, mix or beat Cream Cheese with 4 Tbsp of sugar until sugar is completely dissolved.
- Beat custard with cheese mixture.
- Fold the whipped cream and 2- 3 tbsp of berry sauce to the cheese mixture.
- Add the finely chopped apple pieces.
- Dip each Lady Finger into the sauce (for 1-2 seconds on each side, you can warm the sauce in microwave, i avoided it) and place into cup or rectangle tray until the bottom is completely covered.
- Spread 1/2 of the cream cheese filling evenly on top of the fingers.
- Roughly add few cooked berries over it.
- Repeat with another layer of sauce dipped fingers.
- Top with remaining filling.
- Sprinkle cocoa powder over the top to form a coating.Tea strainer works great!
- Make slight designs with the sauce :)
- Cover it with foil paper or lid.
- Chill overnight to set. (Min 8 hrs)
- Garnish with a light dusting of powdered sugar while serving.
Tips:
- 1 1/2 cups of Cool Whip may be used as an instant alternative to homemade whipped cream. It does taste good.
- While whipping make sure your bowl and whisk is cold.
- If you can get nicely cleaned red apples. Don't scrape of the skin. It will add lovely color.
